Lignans are a group of polyphenolic compounds that are considered phytoestrogens due to their plant origins as well as their anti-estrogenic and estrogenic activities. They are present in a great variety of food and in some beverage, such as wine, tea and coffee [1]. There are few paper regarding lignans quantification in coffee and the most of them quantified various classes of phytoestrogens in different foods and beverages [2-4]. Hence, the aim of our work was to develop a new analytical method to quantify three lignans, i.e., secoisolariciresinol (SECO), matairesinol (MAT) and lariciresinol (LARI) in espresso coffee using of HPLC-MS/MS triple quadrupole.
