Saponins are triterpene glycosides with multiple health-promoting properties. We developed a new analytical procedure for quantification of soyasaponins I and βg in various cultivars of Italian lentils, by SPE-HPLC-MS, and confirming results by MALDI-TOF experiments. In the 32 lentil Italian samples content of soyasaponins I and βg ranged from 28 to 1242 mg kg-1.
