Lentils are at the basis of diet for many populations. This makes the scientific characterization of this product of increasing interest. To this aim, MALDI Mass Spectrometry was used to obtain protein fingerprints of seven different varieties. The obtained protein profiles identified clear differences between the seven varieties, as confirmed by multivariate analysis technique.
