Lentils (Lens Culinaris Medik) belonging to the family of leguminosae, contain a rich variety of nutraceutical compounds, among them saponins, mainly soyasaponins I and βg, which have multiple health-promoting properties such as lowering plasma cholesterol level. In this work an innovative and fast analytical method for the quantification of soyasaponin I and βg in lentils has been developed. Samples were extracted using 70% aqueous ethanol at room temperature and then injected into UHPLC-MS/MS system without pre-purification step (SPE). The validated method that showed an excellent selectivity was applied to the analysis of 30 lentil samples from central Italy.
