Lentils (Lens Culinaris Medik) belonging to the family of leguminosae, contain a rich variety of nutraceutical compounds, among them saponins, mainly soyasaponins I and βg, which have multiple health-promoting properties such as lowering plasma cholesterol level. In this work an innovative and fast analytical method for the quantification of soyasaponin I and βg in lentils has been developed. Samples were extracted using 70% aqueous ethanol at room temperature and then injected into UHPLC-MS/MS system without pre-purification step (SPE). The validated method that showed an excellent selectivity was applied to the analysis of 30 lentil samples from central Italy.

Abstract
Lentils (Lens Culinaris Medik) belonging to the family of leguminosae, contain a rich variety of nutraceutical compounds, among them saponins, mainly soyasaponins I and βg, which have multiple health-promoting properties such as lowering plasma cholesterol level. In this work an innovative and fast analytical method for the quantification of soyasaponin I and βg in lentils has been developed. Samples were extracted using 70% aqueous ethanol at room temperature and then injected into UHPLC-MS/MS system without pre-purification step (SPE). The validated method that showed an excellent selectivity was applied to the analysis of 30 lentil samples from central Italy.I documenti in IRIS sono protetti da copyright e tutti i diritti sono riservati, salvo diversa indicazione.
