The present invention relates to a lentil extract with surprising cholesterol lowering and prebiotic effects that make it particularly useful in therapeutic applications and as a nutraceutical. Said lentil extract is characterized by the presence of soyasaponin I in the range of 50 to 300 mg kg-1 and soyasaponin βg in the range of 0.5 to 5 mg kg-1. The process for the production of said extract and its therapeutic and nutraceutical uses are also within the scope of the present invention.

La présente invention concerne un extrait de lentille possédant de surprenants effets hypocholestérolémiants et prébiotiques qui le rendent particulièrement utile dans des applications thérapeutiques et en tant que nutraceutique. Ledit extrait de lentille se caractérise par la présence de soyasaponin I dans une plage comprise entre 50 et 300 mg kg-1 et de soyasaponin βg dans une plage comprise entre 0,5 et 5 mg kg-1. La présente invention concerne également le procédé de préparation dudit extrait, ainsi que ses utilisations thérapeutiques et nutraceutiques.
