It is well known and demonstrated by several studies that a high intake of dietary fibers improves the glycemic control [2]. The aim of this study was to evaluate the role of an adequate dietary plan in the management of the glucose homeostasis even if subjects are under insulin treatment. In particular, the effect of low Glycemic Index (GI) and high fibers diet was evaluate in a diabetic subject under insulin therapy.
